Raggmunk are Swedish pancakes. Grated potatoes are added to the pancake batter. They are similar to crepes and are fried in butter. They are traditionally eaten with lingonberry jam and pork slices. This is a hearty and tasty dish for when you're in the mood to indulge.
Prep time: 20 minutes
Cooking time: 30 minutes
1/2 cup flour
A pinch of salt
1 egg, beaten
1 tsp oil
300 ml (1 1/2 cups) milk
2 cups grated potatoes
2 tbsp butter
8 strips bacon (optional)
Preheat the oven to 230ºC. Line a baking tray with parchment paper or foil, place the strips of bacon on it and bake for 20 minutes or until the bacon becomes crispy.
Sift the flour and the salt into a mixing bowl. Make a well in the centre and add the egg, oil and milk. Whisk together and set aside for 30 minutes.
Stir the grated potatoes into the batter and use immedistely.
Melt some butter in a frying pan over medium high heat. Make 2-3 pancakes at a time using about 1/4 cup of the batter for each one. Cook each one for 3-4 minutes on each side.
Serve the hot pancakes with some crispy bacon.
I used 2 medium to large sized potatoes to get 2 cups of grated potatoes.
The side of bacon can be replaced with some sausages or even syrup tastes really good with it.
